What a nice way to use beets and avocados when they are in season. I dressed with a raspberry vinaigrette and skipped the honey. Fresh and tasty!!
Delicious! I knew I would love this, just because I love avocado, beets and feta anyway. I used golden beets that I roasted myself -- I don't buy red beets very often because they stain everything. My poor avocado was a bit past it's prime, so I'd really like to try this again with a firmer avocado (if it tasted that good with an old avocado, I can only imagine how good it would be with a better one). I only had one head of romaine, but that still made quite a bit of salad. I was eating this for dinner, so I topped it with some grilled chicken strips after I snapped my photo, too (although my poor anemic avocado looks like chicken in the photo anyhow, lol). This was a good salad. I've been on such a beet kick lately, just love beets in salad! I also love feta and avocado so this sounded like the perfect salad for me. Only change I made was to use spinach instead of romaine because it's what I had on hand... and I definitely didn't use full amount of salad that was called for. Today for my lunch I made it again with a balsamic fig dressing and added walnut pieces and green onion. It was great! Made for ZWT7.

Very good and different salad which we enjoyed even with my minor variations. I only used 1 head of lettuce (which was more than enough I think), skipped the avocado and used low fat feta and I also skipped the honey. Delicious salad which we enjoyed with fish. Yum, yum, and yum! This is absolutely a fantastic combination. Even my beet-phobic DH had several helpings, and 2 year old DS kept asking for more. I did not add the dressing ahead, as we all like different amounts. Instead I mixed the salad and we all applied our own dressing. Served with omelets and roasted potatoes this was a fine addition to a fall meal. This must make a lot of salad, because I cut the recipe in half and still we had quite a bit. This was very good! I was surprised - I'm not fond of beets, but had some to use up. The sweetness of the beets, the creaminess of the avocado, and the salty feta all worked together really, really well. Thanks for sharing!
