This is a great vegan chili. I really liked the unexpected addition of carrots! The lime juice and cilantro were really nice additions, too. I added a bit of water to thin it a little bit. I used a bit of Daiya "cheese" to top this delicious chili. Thanks!
I really loved this recipe! I thought the lime juice was fantastic, and the soy cheese was a nice bonus! I also used chipotle for this recipe, but not much. It did add an extra zing to it, and went especially well with the flavour of the lime juice

This is a great family-friendly and healthy chili which we enjoyed. I skipped the soy cheese but added light sour cream to my bowl. This makes a lot -- so I think the servings should be closer to 6-8 and I think it will freeze wonderfully for lunches or dinner. Thanks for sharing this keeper!
