This was a gourmet-quality sandwich - and it looked the part, too. I used vary-coloured peppers (red, yellow, orange and green) and this was simply striking plated (I wish I had half the photographic skills many of our members have - I make everything look ho-hum, boring). Anyway, back to the sandwich. Remarkable flavour. The balsamic really emphasized the sweetness of the peppers and punched up the mushroom. The pesto and brie just worked beautifully together and I can't wait to have this again!

One of the best sandwiches I've ever had. I stuffed a pita pocket rather than using rolls, returned to the oven briefly just enough to let the brie begin to melt slightly. I'm a big fan of what roasting can do for veggies and the smooth, creamy brie went with them beautifully.
This made a yummy lunch! I used an orange bell pepper and rye bread. Lots of flavors goin' on and it was all good! thank you Redsie!
Outstanding Sandwich! Each bite has a different flavor from the creamy saltiness of the Brie to the sweet tanginess of the balsamic.I took my onions out half way through the cook time as I had cut them too thin. This recipe will be a repeat!
