I love this recipe; it's easy to prepare, it can be made a head of time, it's vegetarian and it's delicious! I often serve it as an appetizer with pita chips. I use basil olive oil to boost the flavor.

This is so good, had this for lunch. It's quick to make too and we sure were satisfied! We had leftover feta dressing which btw is equally delicious, so that means I'll be making this again tonight! Thanks! Made for PF's potluck.

yummy. this was an excellant healthy lunch. and quick too if you prepare for it the night before. the little guys even liked it so that's a definate plus.

This was delicious and satisfying, even without the garbanzo beans. Roasting the vegetables give them a light sweetness, and the contrast of the tangy yogurt dressing brings that out. I really liked the mixed of spices (I used dried where that was an option.) This was also fairly easy to make. Good job.
