Roasted Tomato Salad With Herbs and Feta

A wonderful simple recipe - full of flavour and low in fat. I made this to accompany my supper of baguette and quiche - very much enjoyed thanks. Made for the Summer Salad Snapshots event in the Photos Forum. FT:-)

  1. Pre heat oven to 180C.
  2. Spray a medium baking dish with the olive oil spray to coat.
  3. Place the halved tomatoes, cut side up, in a single layer in the prepared dish.
  4. Sprinkle with the sea salt and lightly spray with more olive oil spray.
  5. Bake for 40 minutes or until tomatoes are lightly browned and tender.
  6. Meanwhile, combine the vinegar, oil and mustard in a small bowl and set aside.
  7. Mix the herbs and feta together and set aside.
  8. Remove tomatoes from oven when cooked and place them on a serving platter and sprinkle with the combined herbs and feta.
  9. Drizzle with the dressing and freshly ground black pepper.
  10. Serve.
