Roasted Tomato Dip

- 2 cups ripe tomatoes, chopped
- 1 teaspoon olive oil
- 1⁄2 teaspoon salt
- 2 tablespoons finely diced onions
- 2 tablespoons chopped fresh basil
- 1 teaspoon balsamic vinegar
- 1⁄2 teaspoon black pepper
directions
- On a rimmed baking sheet, combine tomatoes, oil and salt.
- Roast in a 450* oven for 10 minutes. Turn oven to broil and roast tomatoes until golden brown, about 5 minutes.
- Transfer to a food processor. Add onion, basil, vinegar and pepper and pulse until smooth.
- Serve immediately or refrigerate for up to 3 days.

I can't stop eating it, and I've eaten myself into a food coma. <br /><br />4 Stars The recipe is wonderful as is. I can't think of a single improvement and I will most likely make it again. <br /><br />3 Stars This needed a little *something*something*. I might make it again, but will add my own improvements if I do. <br /><br />I love to eat! And I love to cook. I tend to take over the kitchen when I get in there.
