  • Coat a 13 x 9 inch baking dish with nonstick cooking spray.
  • Add potatoes to the prepared dish.
  • In a bowl, stir together the remaining ingredients until well blended; pour the butter mixture over the potatoes and turn to coat evenly.
  • *At this point, you can cover and refrigerate for up to 2 days, bring to room temperature before continuing.
  • Preheat oven to 375°; bake until tender when pierced with a knife, 45-55 minutes.
  • Remove from the oven and serve hot or at room temperature.

  1. I thought the potatoes were good and they fit in just fine with my friend's Asian-inspired potluck... but I'm not sure my friends liked them as much! I'm a sweet potato freak and would eat them just about any way you could serve them, though. Four stars.. yummy enough.. but not for everyone's taste buds.
