From Southern Living. I haven't tried this one yet, but it sounds good. They paired it with a salad of mixed greens, cucumber, and red onion, but I can think of lots of other uses for it, too.
- 1 (7 ounce) jar roasted red peppers, drained
- 2 large garlic cloves, chopped
- 1 cup nonfat yogurt
- 1 teaspoon salt
- Blend all ingredients in blender or food processor till smooth.
Loved it. :) As someone doing the WW Core program, I'm always on the hunt for fat free dressings that are not full of chemicalsI can't pronounce. This dressing was full of flavor and paired well with my simple salad of romaine, carrot curls, sliced cucumbers and red onion rings. I found the dressing tad bit sweet and added a quick twist of freshly ground black pepper and a sqeeze of lemon juice did the trick. Thanks!
