This is great with onion, potato, salmon patties... It is great with crab cakes too!
- 7 ounces roasted red peppers, drained and patted dry
- 1⁄8 teaspoon cayenne pepper
- 1 tablespoon vinegar
- 1⁄4 cup olive oil
- 1⁄4 cup plain yogurt
- In a blender or food processor puree the red peppers, cayenne, and vinegar until the mixture is smooth and with the motor running add the oil in a stream. Turn off the motor, scrape down the sides, and blend in the yogurt and salt/pepper to taste.
Super good! I made as directed, but added a couple of things - first, some fresh small sweet peppers in the food processor - because I did not have enough of the premade. I also added 2 fresh pressed garlic cloves - they add so much flavor! Thanks for posting, VickyJ, I appreciate it.
I'm going to refrain from rating this because I changed it a lot by using soy yogurt and because I didn't use it for its intended purpose --- I put it on salad. It was pretty good, but I thought it needed more flavor. If I made it again I would definitely add some garlic, and onions or onion powder and some more spices and maybe more vinegar. I can definitely see how it would be good on patties, though!
Easy to put together, healthful, and good-tasting too! I used with crab cakes and it worked well with the other two sauces I made too. I'm going to make potato cakes to use up the rest of the sauce. Thanks, VickyJ, for a tasty recipe!
