DELICIOUS! I love Rataouille and roasting it does bring out the wonderful flavors of the vegetables. I followed the instructions except for leaving out the fennel because I didn't have any. The fresh herbs and then at the end adding a little olive oil, balsamic vinegar and fresh basil put this over the top. Made for Bounce the Ball for Summer Fun Tag Game.

Omitted the fennel and peppers due to personal taste, but otherwise prepared as written. My boyfriend and I practically inhaled it . . . the aroma in the house tempted us the whole time it was in the oven, and it was every bit as good as it smelled! An excellent recipe which I will definitely be making again and again. Thanks!

A ten star recipe! I have never met a vegetable that I haven't enjoyed roasted, so this method of preparation was over the top delicious...much better to my taste than the stewed type of ratatouille.

This was great, nice and simple. I didn't have all the vegetables listed, but it's a very versatile recipe so it's fun just choosing your favourite vegetables and roasting them. I ended up roasting everything for over an hour, maybe an hour and twenty minutes, just keeping an eye on them till they looked perfect. Might even let it go for longer next time since I really enjoyed the caramelized flavours. Thanks!

I had some eggplant fear having never cooked it and having read it can become bitter but this dish was delicious. Even my husband, who normally won't touch half of these vegetables, was impressed. I later used some of the veggies as a pizza topping which was also a hit.

I wasn't a huge fan of the fennel although I liked it more than I expected since I don't like licorice/anise flavors. I'll use less or omit it next time.

I've made this dish a couple of times, each time it comes out a little different. I just love the ease of putting it in the oven and just stirring it occasionally. Thanks for a great veggie dish!

This was absolutely fantastic and easy to make. I did not use the fennel or yellow peppers, did not have on hand. Will definitely be making this dish again! I think this would be a nice potluck dish.

Very, very good! So much simpler than the traditional recipe and the flavors were fabulous. I really liked the fennel. This will be a regular in our house. Thanks!
