My husband and I really liked this recipe. The kids left it except for one that ate all of the mushrooms. Oh Well!

Excellent dish! My favorite kind--very simple recipe which gets the most out of the ingredients--wonderful flavors of the vegetables and mushrooms--the roasted garlic a particularly inspired touch. I will make again and again. Thanks, Paula!

This looks like a long recipe when you see all those steps but a lot of them are just instructions to chop the veggies, prepare the pan and preheat the oven. This really is NOT a lot of trouble to make. The beans took a bit longer to get tender in my oven, but this was no problem. Dishes like this are winning me over to roasting as a favorite way to cook vegetable dishes; roasting seems to do something indescribable but yummy to the flavor. I loved the thyme; I actually left out the parmesan cheese (all out of it), but it was STILL great. This is definitely one to share!

Oh, YUM! I made this in a ceramic 9x13 casserole dish following the recipe, except using red potatoes instead of Yukon gold (that's all I had). These flavors melded together perfectly. I roasted the green beans longer than 15 minutes , stirring occasionally, to achieve desired tenderness. I might cut the thyme to 1/2 tsp. next time (personal preference). This was just delicious - thank you!

This is a fabulous recipe. I love combining vegetables for side dishes. Great combination of flavors and the cheese adds the finishing touch. This will be one I will be making many more times. Thanks so much for sharing, Paula.
