Roasted Pepper and Artichoke Panini

ingredients
- 2 tablespoons oil
- 1⁄2 cup onion, sliced
- 1 teaspoon garlic, minced
- 1⁄2 cup marinated artichoke hearts, drained
- 1 (8 ounce) jar roasted red peppers, drained (or roast 2 peppers and peel)
- 1⁄2 teaspoon dried dill (or herb of your choice)
- 1⁄2 cup frozen spinach, thawed and drained
- 1⁄2 cup parmesana cheese, grated (not the powdered kind)
- 1⁄4 cup feta cheese, crumbled
- 4 flour tortillas (or wrap of your choice)
- 1⁄2 cup cherry tomatoes, cut in half
directions
- Heat oil in skillet on medium heat.
- Add onion, cook until translucent, 3-5 minutes.
- Add garlic to pan, cook for 2 additional minutes.
- Reduce heat to low, add red peppers, artichokes, spinach, and herbs. Cook until just warm. Remove from heat.
- Place 1/3 cup pepper mixture on one half of wrap.
- Top with 1 tablespoon feta and 2 tablespoons parmesana.
- Fold in half.
- Spray with oil and place on grill untill browned and warm.
- Remove from heat.
- Open and add cherry tomatoes and sprinkle with salt.
