  • 2 tablespoons oil
  • 12 cup onion, sliced
  • 1 teaspoon garlic, minced
  • 12 cup marinated artichoke hearts, drained
  • 1 (8 ounce) jar roasted red peppers, drained (or roast 2 peppers and peel)
  • 12 teaspoon dried dill (or herb of your choice)
  • 12 cup frozen spinach, thawed and drained
  • 12 cup parmesana cheese, grated (not the powdered kind)
  • 14 cup feta cheese, crumbled
  • 4 flour tortillas (or wrap of your choice)
  • 12 cup cherry tomatoes, cut in half

directions

  • Heat oil in skillet on medium heat.
  • Add onion, cook until translucent, 3-5 minutes.
  • Add garlic to pan, cook for 2 additional minutes.
  • Reduce heat to low, add red peppers, artichokes, spinach, and herbs. Cook until just warm. Remove from heat.
  • Place 1/3 cup pepper mixture on one half of wrap.
  • Top with 1 tablespoon feta and 2 tablespoons parmesana.
  • Fold in half.
  • Spray with oil and place on grill untill browned and warm.
  • Remove from heat.
  • Open and add cherry tomatoes and sprinkle with salt.
