This was easy and yummy. I used fresh goat cheese from the Jennings' Family Farm in NH. Would have given the recipe 5 stars except that the breasts with the 'stuffing' were great, but the rest was just roasted chicken. Next time, I'll make this with just breasts so I can 'stuff' them with the pecan-goat cheese mixture.
