Roasted Parmesan Potatoes

  • Preheat oven to 450°F Line baking sheet with aluminum foil and spray with cooking spray. Slice potatoes in half, then cut into 1/2 inch cubes.
  • Place potatoes in a medium bowl and toss with oil. Combine Parmesan, parsley, paprika, garlic powder, salt and cayenne pepper in a small bowl.
  • Add the Parmesan mixture to the potatoes, toss to coat potatoes evenly.
  • Arrange potatoes on prepared baking sheet. Bake, turning once, until potatoes are lightly browned and easily pierced with a knife, about 25 minutes.

  2. We loved these potatoes. The parmessan was great. I used some small red potoatoes, cut them in half and they were ready to go. We had this with some salmon and fresh green beans. They were the perfect dish to round out the meal. Thank you for sharing your recipe.
     
  3. I loved the flavor. Only omitted the cayenne. guessed on oil. Can preboil in bowl with water in microwave about 6 min. to soften a bit...just drain good. I Just used hands to combine and after 25 min I turned on broiler for a bit to crisp up a bit Very tasty. thank you

  5. I've tried other recipes similar to this one, and the potatoes are often greasy. Not so with these--one tablespoon of oil is just the right amount. A nice blend of spices, too--thanks, FLFroggie.

Tweaks

  1. I make potatoes this way as well; however, I use roasted, chopped garlic and some steak seasoning in place of the garlic powder and cayenne. The zip bags are the BEST for tossing these guys to get the coated evenly. Easy recipe for beginners and they taste complicated, but they aren't!

I am a Type 1 diabetic with an awesome husband and kitty. My diabetes was very sudden but I have learned a lot about it in the last year and I am managing it pretty well with my latest A1c at 6.8%. I have always loved to cook and enjoy looking for new recipes to spice things up some. My husband hates having the same dish twice in one month, so I face many challenges to come up with new things. I also enjoy quilting and journaling.
