This is one of the best Hummus recipes I have ever tasted. I roasted the garlic as directed and it made such a difference in the overall dish. We served this dish with pita chips. I will definitely make this dish again. Made for PAC, 2011.
What a wonderful, flavourful hummus recipe! I luved the addition of roasted garlic with the earthy tahini, fresh parsley and fruity cumin. This was soooo good, I really couldnt stop eating it. :) Mmmmm!

Wonderful base recipe. I like to increase the amount of garlic as the roasted garlic is so much more mellow. To add a little more pizazz I've found 1/2 teaspoon of cayenne pepper blended into the hummus as will as a gentle dusting of cayenne, paprika and kosher salt on the surface really knocks this one out of the park. My father always thought hummus was bland until I served this to him and he couldn't stop eating it.

A great version of a classic! I used roasted garlic that I had left from Garlic Olive Oil Plate With Capers and the roasted flavour really shines through in this recipe. This is a wonderful and easy hummus recipe! As magpie suggested, I put some garlic in my oven when I was baking bread on the weekend, so I had it ready when I made this. I used two cans of 14 oz chickpeas, which was about 2 1/2 cups, so I needed a little bit of extra water, and my 1/2 tsp measurements where heaping to account for it. I didn't measure the lemon juice, just added the juice of one lemon. With the food processor, this was so easy! I'll definately make this again and again! Thanks, magpie!
