Roasted Garlic

- 1 medium head of garlic
- 2 tablespoons olive oil
directions
- Method 1: Preheat oven to 250 degrees F (125 degrees C). Slice 1/4 inch off top of garlic bulb. Place in a small baking dish and drizzle with olive oil. Bake in preheated oven for 20 minutes, until outside is lightly browned and garlic cloves are soft. When cool enough to touch, squeeze each clove to extract softened garlic.
- Method 2: Preheat oven to 250 degrees F (125 degrees C). Peel each garlic clove. Place in a single layer in a small baking dish and drizzle with olive oil. Bake for 15 minutes, until garlic is soft.

Hmmm....something did not work for me. I followed method 1. After 20 minutes I tested with a little knife...no where near soft enough. So I baked another 10 minutes thinking that surely had to be enough. The cloves sqeezed out OK, but I thought that they were supposed to be really really soft. These were not. I still had to use a garlic press to mash them up.

I live in Tennessee where I am a full-time nursing student. This past May 2006 I finally graduated after 4 long years of college with my Associate Degree in Nursing. My passions are my boyfriend of 6 years, Benjamin, my 2 baby kittens: Midoria (Middy for short) - she is 6 years old; and Ki-Ki - he is 4 years old...but they are both still kittens to me. They are the foundation and true essence of my life. I thank God everyday that I have been so blessed to have them in my life. My pet peeves are mean people.
