Roasted Eggplant (Aubergine) Spread

  • Preheat the oven to 400 degrees F.
  • Cut the eggplant, bell pepper, and onion into 1-inch cubes.
  • Toss them in a large bowl with the garlic, olive oil, salt, and pepper.
  • Spread them on a baking sheet; roast for 45 minutes, until the vegetables are lightly browned and soft, tossing once during cooking.
  • Cool slightly.
  • Place the vegetables in a food processor fitted with a steel blade, add the tomato paste, and pulse 3 or 4 times to blend.
  • It should still have a lot of texture left, and not completely pureed.
  • Taste for salt and pepper.

  1. This was great on homemade french bread! Our family had friends over and I anticipated it would be something that only the adults would be interested in. However, I should have doubled it because even the very pickiest child wanted more. It says it all when an 13 year old says, "This is stuff is amazing and I absolutely hate vegetables!"
     
  2. A fantastic versatile recipe. Use the veggies chunky with extra tomato and sauce for pasta, slightly mashed up for topping a crusty bread. When produce is fresh and plentiful I roast up and freeze for enjoying over the winter. Thanks for posting this wonderful dish.
     
  3. I had a strong feeling I was going to love this recipe and I was sooo right. Your directions were easy to follow and I did manage to leave some texture. Sometimes my food processor gets away from me and I overdo it, but I was real careful. I put the spread on my favorite toasted tortilla chips and that was my lunch. Very delicious and thanks for posting this recipe.

  5. Oh no! I never reviewed this? I love this stuff! No one can tell it's eggplant so no worries there if some aren't a fan. Unfortunately I rarely make it now because I can't seem to digest eggplant well. I tried it with zucchini and it tasted good but was much more watery.

<p>Life often interupts our comfortable routines in very unexpected ways and in the past three years I've certainly faced some challenges.&nbsp; As a health nut who ate mostly vegetarian I was beyond shocked to discover that I was diabetic.&nbsp;<img title=Yell src=../tiny_mce/plugins/emotions/img/smiley-yell.gif border=0 alt=Yell /> I shouted and rebelled and cried.&nbsp; But the good news is that I can control my glucose levels simply by eating very low carb.&nbsp; What a complete turn around it was to&nbsp;pass up&nbsp;all my high carb vegetarian foods like grains, and veggies and embrace meat!&nbsp;<img title=Surprised src=../tiny_mce/plugins/emotions/img/smiley-surprised.gif border=0 alt=Surprised /> I've adjusted to this limited diet and thanks to Zaar can eat a nice variety of healthful meals.</p> <p>&nbsp;The next challenge was a freakish fall I took while in New York with my daughter that left me paralyzed and in much pain.
