Roasted Dijon Broccoli

This is a great new way to make broccoli--quick and easy but delicious. Recipe courtesy of Taste of Home Healthy Cooking.

  1. Place a bunch of broccoli cut into florets onto a baking sheet.
  2. In a small bowl, whisk the olive oil, red wine vinegar, dijon mustard, garlic clove, salt, and pepper.
  3. Drizzle over broccoli and toss to coat.
  4. Bake, uncovered, at 425 for 10 to 15 minutes or until tender.

What a great way to make broccoli! I upped the garlic to 4 cloves since we love it. The mustard gave it a good taste. Made for My 3 Chefs 2012.
