This was a hit with the whole family. Love the intense flavors of the roasted vegetables and chook. The gravy was rich and delicious, too. Added mushrooms to the mix, which was an added bonus. I used a refrigerated crust, though I think this would be much better with homemade. Will most definitely make this one again - thank you!
Wow, this was so good..... I'll be making my pot pies this way from now on...... I love the addition of the pearl onions instead of using chopped onions.... The flavors from the herbs just made this pot pie out of this world..... I put this together on Saturday and placed it in the refrigerator and baked it on Sunday..... This was amazing.....

I love chicken pot pie!!! However this is more than just pot pie. The chicken and veges are good enough to serve for dinner. Without a doubt the best tasting chicken I have ever had, moist, well seasoned with a crisp crust. and the gravy it makes is good enough to eat with a spoon. I LOVE THIS DISH thank you so musch for posting this wonderful pot pie.
I love the sound of this recipe. I like to do things from scratch and I will be trying this version of Chicken Pot Pie. I'm giving this a 5 star because it has the right amount of herbs, vegetables and seasonings. Plus the roasting of the chicken and vegetables will intensify the flavours.
