Such a simple recipe with wonderful taste. From Cooking Light
- Preheat oven to 400.
- Arrange cauliflower in a single layer on a baking sheet coated with cooking spray. Coat cauliflower with cooking spray; sprinkle with salt and pepper.
- Bake at 400 for 25 minutes, turning cauliflower twice.
- Melt butter in a small skillet over medium heat; cook 3 minutes or until lightly browned.
- Combine cauliflower and browned butter in a bowl and toss gently to coat.
Made this tonight along with 1/2 a roasted turkey breast, sweet potatoes and a tossed green salad.
The cauliflower was excellent - I sprayed a foil lined cookie sheet with butter flavored Pam, then sprayed the florets with the same butter flavored spray, lightly sprinkled with salt, pepper and a bit of ground garlic (or garlic powder not garlic salt) - roasted for 10 min at 400F, then turned them over and roasted another 10 min - they were absolutely perfect! Lightly browned, and very tasty! Depending on what (protein) I am serving them with, I will probably change the spices/seasonings to suit the entree. Will definitely make this often (soooo much better than boring steamed cauliflower, and way less calories than cheese sauce/au gratin!). Thanks for sharing your recipe. :-)
Very tasty, easy, inexpensive, and healthy! I like the idea of using cooking spray to get the salt and pepper to adhere to the cauliflower-creative. Fantastic recipe! For those of you who do not want to use olive oil! I still slice my floweretts with the stems on "flat little trees". This recipe can be drizzled on if you have flat pieces or tossed if you have just the flowerettes. Good and rich. Excellent served with fish. Thanks for posting!
