Roasted Cauliflower Soup

This is a creamy and comforting soup that isn't weighed down with butter, cream, or cheese. It's healthy and guilt-free!

I chose this recipe 1)because I had all the ingredients and 2)it was low fat and WW friendly. This soup had very interesting flavors that I quite enjoyed. I love garlic, so I added 5 cloves to the roasting pan. Next time, I won't puree it as much and leave it on the chunkier side!

  1. Preheat oven to 400.
  2. In a large bowl, combine oil and spices.
  3. Add florets, and toss until evenly coated.
  4. Roast for 25 minutes, stirring halfway through.
  5. In a saucepan, combine roasted cauliflower, chicken broth, Worcestershire sauce, and tamari. Bring to a boil, reduce heat to low, and simmer for 30 minutes.
  6. Remove from heat, and puree in a blender or food processor or with an immersion blender.
