Excellent roasted cauliflower. I absolutely love it and could probably eat the whole batch by myself! I set my oven to 350 degrees F. and roasted the cauliflower for 40 minutes, stirring occasionally. It turned out perfectly. The only change I made was to lessen the amount of oil by almost half. It seemed enough for the size head of my cauliflower. I adored the toasted pine nut addition. Yum!

Aussie Swap #64: Kate - this was an incredible dish! I love cauliflower but this takes it to a whole new level - and the pine nuts - to die for!! One of my new fave dishes!!

I'm weak at the knees. Cauliflower doesn't get any better than this. I cut back on the oil a bit and used a mix of toasted pine nuts and sunflower seeds. I can't imagine roasting cauliflower any other way now. Absolutely sensational. Thanks so much for posting.

Wonderful side! We loved roasted veggies and garlic so of course we loved this and the toasted pine nuts were a tasty finishing touch. I made as written and will be making again. Thanks for the post.

Great recipe for cauliflower. I have roasted a lot of vegetables but this was the first time that I had roasted cauliflower. So glad I found this easy recipe for my first try. The flavors with the olive oil and garlic really were amazing with the cauliflower. I added a little water to my pan during the roasting because my flowerets were browning up nicely but still a bit too crunchy. Thanks for the recipe. Made for The Love Train 2012.

Delightful! This was a great way of preparing cauliflower. The pine nuts added a nice crunch and nutty hint. Thanks for sharing your recipe, katew. Made for the "Best of 2011" tag game.

So tasty! I wondered about the pine nuts...so expensive but so worth it! Excellent recipe.

I almost never make cauliflower because broccoli is my absolute favorite vegetable (so why not just always make that instead?) but I'm really glad I did this time! The garlic flavor really shined through which is always a good thing in my book and the pine nuts were a nice addition. Made for Holiday Tag.

5+ stars! The smell was wonderful, and so was the taste. I forgot to sprinkle on the pine nuts for the pic, but they are wonderful with the recipe as well. This is now my favorite way to do cauliflower!

I really enjoyed the flavor of the broccoli and cauliflower. The kids ate it as well. DH wasn't a fan so much. We served this with pulled pork sandwiches and Greatest Chips (French Fries) on Earth . Made for the December 2009 Aussie/NZ recipe swap. Thanks for sharing!

This was so easy and great. I used a bag of chopped up cauliflower n broccoli that I had in the freezer. Loved the crunch of the dish. Great served with Lamb Chops and mashed potatoes

Loved this one. I upped the garlic quite a bit and didn't use the nuts. I used less oil since I made a smaller portion than 1 whole cauliflower. Thanks for the recipe. Made for Holiday Tag 2009.

Very good. I made as directed but used only 1/4 cup oil. I used more garlic too. I cooked mine for 45 minutes. Thanks Kate for a wonderful dish! Made for Ausie Swap #34.

I love cauliflower and this is a nice recipe with a slightly different twist - loved the pine nuts, almost forgot them added them at the end. Made for Aus/NZ swap.

The combo of roasted garlic and pine nuts in this was wonderful. I drastically reduced the olive oil, and used about 1/4 cup pine nuts. I forget whether I roasted it 30 or 40 minutes, but we prefer tender cauliflower so I think I could have roasted it longer.

I truly enjoyed this recipe with the pine nuts. I toasted them along with the cauliflower. I cut the florets up small, because I love the brown bits! Thank you for posting! Made for Australian Swap#23!

Used lemon pepper instead of the usual S&P, but otherwise followed the list of ingredients, & thought the toasted pine nuts added a great touch! Certainly a keeper of a recipe! [Made & reviewed as a kidnapped recipe in the Aus/NZ Special Recipe Swap #19]

My daughter who isn't a fan of cooked cauliflower said it was okay and ate a few pieces without complaint. I will probably make it again since it was so easy.

This was really good. I left out the pine nuts because I was lazy and added a bit more garlic. The cauliflower came out very tender with that wonderful roasted garlic flavor. Thanks for a great side kate.
