    Directions:

      Heat oven 170 C.

      Cut cauli into small, even flowerets.
    3. 3
      Place in baking dish.
    4. 4
      Mix oil and garlic together.
    5. 5
      Drizzle over cauliflower.
    6. 6
      Season with salt and pepper.

      Toss well to coat.
    8. 8
      Roast 30 - 40 minutes till golden brown and tender.

      Scatter with parsley and pine nuts and serve.

      Excellent roasted cauliflower. I absolutely love it and could probably eat the whole batch by myself! I set my oven to 350 degrees F. and roasted the cauliflower for 40 minutes, stirring occasionally. It turned out perfectly. The only change I made was to lessen the amount of oil by almost half. It seemed enough for the size head of my cauliflower. I adored the toasted pine nut addition. Yum!

      Great recipe for cauliflower. I have roasted a lot of vegetables but this was the first time that I had roasted cauliflower. So glad I found this easy recipe for my first try. The flavors with the olive oil and garlic really were amazing with the cauliflower. I added a little water to my pan during the roasting because my flowerets were browning up nicely but still a bit too crunchy. Thanks for the recipe. Made for The Love Train 2012.
