  1. Preheat oven to 425 degrees F.
  2. Line a 15x10x1-inch baking pan with foil; set aside. In a large bowl combine Brussels sprouts, apples, onion, pancetta, oil, salt, mustard seeds, and pepper. Transfer mixture to the prepared baking pan.
  3. Roast, uncovered, for 25 to 30 minutes or until sprouts are tender, stirring once.
  4. In a small bowl whisk together vinegar, honey, and Dijon mustard. Drizzle vinegar mixture over sprout mixture; toss gently to coat.

Lovely Brussels sprouts recipe! Dressing is a tad sour so next time I would reduce vinegar slightly. Used crisp bacon that I have frozen and stirred that in about 10 minutes before serving . I prepped this earlier except for apple. Served with Peaches Chicken Cutlets and Orange Scented Couscous.

Wow this is a terrific recipe! Used yellow onion instead of red and made half the recipe. Just loved the apples with the brussels, a lovely combination. The dressing is fantastic and I loved the addition of the mustard seeds too. Thanks for sharing the recipe!

What a sumptuous side dish, perfect for holiday dinners! At our dinner table there were some odd remarks: from a Brussels sprouts lover, "the Brussels sprouts didn't stand out", and from a Brussels sprouts avoider, "this was good, but I wouldn't call this a Brussels sprouts dish because so much was going on." The rest of us just loved the recipe because it tasted so good! I loved how easy this was, too. Made for Best of 2013 tag game.
