If you are roasting a chicken or other meat in the oven, save 1/4 cup of the fat drippings, and use to coat the broccoli instead of the olive oil. The variations on this are endless - include tiny baby carrots and cauliflower if desired.
- Preheat oven to 400 degrees.
- Toss broccoli and garlic in the oil until coated.
- Add salt and pepper to taste and spread in one layer on cookie sheet.
- Roast for 5 to 8 minutes, or until tender, stirring once or twice.
Great, easy recipe. I added a red pepper sliced into strips - delish! And used powdered garlic to shave off more time. It took approx 12 minutes to roast to crisp-tender. Hubby and 2 year old DD loved it. Thanks!
I used sesame oil and toasted some sesame seeds to sprinkle onto was a big hit!
Very good - I had a red pepper I needed to use so I cut that up in big pieces and cooked it with the broccoli. I roasted the veggies for about 15 minutes. Came out perfect! I've never had broccoli roasted - we eat alot of broccoli and I usually just steam it - we'll be making this one often. Thanks for posting!
