If you are roasting a chicken or other meat in the oven, save 1/4 cup of the fat drippings, and use to coat the broccoli instead of the olive oil. The variations on this are endless - include tiny baby carrots and cauliflower if desired.

  1. Preheat oven to 400 degrees.
  2. Toss broccoli and garlic in the oil until coated.
  3. Add salt and pepper to taste and spread in one layer on cookie sheet.
  4. Roast for 5 to 8 minutes, or until tender, stirring once or twice.

Great, easy recipe. I added a red pepper sliced into strips - delish! And used powdered garlic to shave off more time. It took approx 12 minutes to roast to crisp-tender. Hubby and 2 year old DD loved it. Thanks!

I used sesame oil and toasted some sesame seeds to sprinkle onto was a big hit!
