Turn plain ole' ordinary asparagus into an EXTRAORDINARY side dish with this simple recipe!!!
- 1 bunch asparagus
- 2 tablespoons sun-dried tomatoes
- 1 teaspoon kosher salt
- 1 tablespoon olive oil
- 1 garlic clove (Minced)
- 1 tablespoon balsamic vinegar
- Trim asparagus.
- Combine all ingredients and place in a ziplock bag and refrigerate for 20 minutes.
- Preheat oven to 400 degrees and roast for 20 minutes or until tender, tossing half way through.
- Serve immediately!

This is a great and simple recipe! Even while it was just marinating, it smelled wonderful. The roasting was really nice. I had some skinny spears, so I checked on it at 10 minutes and they were perfect. Thanks for sharing! PAC Spring '11
