Roasted Asparagus With Balsamic Browned Butter

"I found this recipe in a Cooking Light magazine; it differs from some of the other Cooking Light recipes in that there is no oil and fewer ingredients. It is a very simple and delicious way to prepare asparagas."

  • Arrange asparagas in single layer on baking sheet coated with cooking spray.
  • Sprinkle with Salt and Pepper.
  • Bake at 400 degrees for 12 minutes until tender.
  • Melt butter in small skillet; cook for 3 minutes until light brown. Remove from heat and stir in soy sauce and balsamic vinegar.
  • Drizzle over asparagas and serve immediately.

  2. Wow!!! I don't give to many 5 stars to vegetables, but this one certainly deserved it! I love roasted veggies and this recipe couldn't have got any easier. We had friends come over at the last minute and this recipe came to the rescue! I will definately remember this one when I get into the same jam the next time!!! Good find!!!
     
  3. Well...a strange thing happened and I ended up cooking brussel sprouts in place of asparagus as mine were frozen in my fridge vegetable bin. However the method of roasting then combining with the sauce was still delicious. Cant wait to get some more asparagus and try as intended.
     
  4. This was an absolutely great recipe! My husband loves asparagus, but I didn't really have any special way to make it. I usually just steamed them plain, but I decided to try this recipe and my family loved it! My husband described it as "vegetable candy" because he couldn't stop eating it! He asked me to go get more asparagus tonight so we can have it again!
     
  5. Excellent! At the last minute, my husband picked up Asparagas at the grocery store for a BBQ. I wasn't sure what the best way was to cook it, but have had great luck oven-roasting vegetables. It was definitely a crowd-pleaser! I followed the directions exactly and will use the sauce with other vegetables the next time we oven-roast! Thanks!

I am a single mother of two wonderful boys ages 9 and 15. While keeping up with my boys (or at least trying), I work full-time as a manager for risk management firm in Sacramento, California. Cooking always seemed so easy when I watched her, but I soon learned that I needed a little practice. Nonetheless, I enjoy cooking a meal, whipping up an appetizer, or baking an amazing dessert. I usually try to fix healthy low-fat meals, but my boys are pretty picky and sometimes the low-fat meals don't taste so exciting. I try to fix one new dish each week to keep the monthly rotation of meals from getting too boring. For the most part, I try to keep it simple whether it be meals or just life in general!!!
