My mom and I really liked this. I evenly divided the veggies into two pans so that they would roast evenly. I cooked them for 15 minutes, added two cloves of garlic, and continued roasting for 5 more minutes. We thought it would be great with the addition of some lemon juice and maybe even some shrimp stirred in for protein. We'll definitely be making this again. Thank you for posting!
We absolutely love this soup! It is easier and better tasting than my old recipe that just boiled the asparagus. The green onions are a wonderful addition. I usually use 2 lbs of asparagus but everything else is the same. Thank you!!
This is a really good soup. My only real problem was eating the roasted veggies before I could get the soup made. I did have to add a little bit more salt for our taste, and I did add a little garlic powder also. But overall, a wonderful comfort food.
I enjoyed the smoky flavour of this soup and so did my guests. I added about 1/4 tsp. cumin to play it up a little. On the whole, I found the soup a little bland and found myself playing with seasoning and trying to liven it up somehow. I did include a whole head of roasted garlic with added a nice dimension. I felt the asparagus flavour was a little lost on this soup. But it did taste good. Maybe upping the amount of asparagus might help? Thanks...
