Roast Lamb With Potato, Onion and Pepper Gratin

"This is an interesting way to cook the lamb and a vegetable gratin at the same time. The juices from the lamb drip into the gratin dish placed underneath the lamb. It's good, and a fun way to cook, but beware, it can get rather messy."

  • Split 1 clove garlic. Rub bottom of 16x10x2 inch oval gratin dish with split clove of garlic. Arrange potatoes over bottom of pan. Chop together remaining 5 garlic cloves, and thyme. Season generously to taste with salt, pepper and 1/3 of garlic-thyme combination. Layer sliced onions on top. Season to taste with salt, pepper and another 1/3 of garlic and thyme. Layer peppers on top of onions. Season to taste with salt, pepper and remaining 1/3 garlic and thyme. Pour over wine, then oil.
  • Trim excess fat from lamb. Season meat to taste with salt and pepper. Place sturdy oven rack directly on top of gratin dish. Set lamb on rack so that juices will drip into gratin.
  • Roast, uncovered, at 400ºF about 1 hour and 15 minutes for rare. Turn lamb every 15 minutes, basting with liquid from dish underneath. Remove from oven and let lamb stand on rack so that juices will drip into gratin.
  • To serve, carve lamb into thin slices and arrange on warmed dinner plates or on serving platter with vegetable gratin alongside.

  1. Such delicious flavour! I roasted the lamb for nearly 2 hours as we like our lamb very well-done. This allowed the veggies in the gratin to soften a lot and meld and absorb the yummy juices emitted from the lamb. A lovely Sunday lunch, and very, very easy.
     
  2. Wow! This was fantastic! I served this last night to our daughter's future in-laws, visiting from England. It turned out even better than I had expected. I increased the potatoes to 4 good sized baking potatoes (don't know the weight). I increased the liquid to 1 1/2 C. of wine and 1/2 C. of olive oil. The jar of roasted peppers was 12oz. I used a nearly 6 lb. boneless leg of lamb from Costco and cooked it for 75 min. in a convection oven. I did not turn the meat as directed because I had a meat rack balanced in 3 metal skewers above the gratin and I did not want to push my luck. After cooking, the lamb rested under foil for about 20-30 min. as we were not quite ready to eat. The meat was medium to medium rare. I think next time I will cook it for an hour or not let it sit so long. As delicious as the meat was, the gratin was the star of the meal. First of all, it looks gorgeous, like something you would see in a food magazine. The potatoes absorbed all the liquid, the onions were sweet and tender and the roasted red peppers were colorful and savory. I might add artichoke hearts next time, but other than that and the previously mentioned changes, this is perfect as is. Our future son-in-law, all 6'5" of him, had thirds!
