Roast Beef Spread for Sandwiches

You will need a meat grinder for this. Your food processor might work if you don't over chop. Cooking time for the roast is not figured in.

I needed little bite-sized sandwiches for an event hosted in the middle of beef country. This filling seemed to fit the bill perfectly. I did omit the eggs, but otherwise followed the recipe. I used sandwich bread with white on one side and wheat on the other and sliced into triangles. The guests were interested to see a familiar farm lunch dressed up for company. It was a hit.

Directions

  1. Cook meat and cool.
  2. Grind celery, onion, eggs and then the meat.
  3. Mix all ingredients together.
  4. Serve on bread.
