    This is my favorite sandwich! My husband and I made this up one Sunday afternoon and it turned out so great! Hope you enjoy this sandwich as much as we do!

      Mix lime juice, garlic clove, hot sauce, Dijon mustard, cilantro, mayo and salt and pepper to make the Cilantro Lime Mayo and set aside.

      Lay out bread and top all pieces with Mayo mixture. Next on 5 slices of sour dough bread add cheese, roast beef, whole green chili and mozzarella cheese. Top with the other pieces of bread.

      Spray with butter flavored cooking spray or butter and put in Panini press until brown and melted.

      I made this sandwich for my mom, brother and myself the other night and it was a hit! I used white sharp cheddar instead of sharp cheddar, dried cilantro instead of fresh (only because I just had to throw some away), and diced green chiles instead of whole. Also I realized I didn't have dijon mustard - it was honey mustard - so I did half honey mustard and half regular yellow mustard mixed with a tiny drop of white vinegar (per google search for dijon mustard substitute). Everything else followed the recipe. I can't imagine this sandwich on any other bread besides sourdough. I ended up with extras of all the ingredients since there were only 3 of us so that means lunch for me the next few days. :)
