Very very yummy. I made it with nilla wafers, and everyone loved the change of pace from the usual mushy graham cracker crust. I'm glad you had the tip about the grainy texture, which explains my previous tries at cheesecake. The topping was nice and creamy. DEFINITELY A GREAT CHEESECAKE! I made this using vanilla wafers instead of the usual graham cracker crust & it was wonderful! Very easy to put together & we really did enjoy the simple flavor of this dessert! I did have a blueberry & peach combo that we used to top a few pieces (& that was nice), but this really is wonderful, just plain cheesecake & the recipe is a definite keeper! Thanks for sharing it! This is THE BEST CHEESECAKE in the WORLD! I know because it is the same recipe my mom has made for all my born days (and there's been lots of those). It was a recipe she obtained from my godmother and was always a treat made for special occasions and birthdays! But really, who needs an excuse?
Wonderful cheesecake! The only thing that didn't flow well here was the crust. I think there's too much butter in it as it has a caramelized texture to it. I think next time I'll lower the butter to 4 tbs and maybe only 2 tbs of sugar. I used light neufchatel as that's what I had on hand. I also added a touch of orange extract to both the filling and topping. I was surprised by the topping that sour cream could be dessert with just some sugar and vanilla, but it turned out great!
