Rita's Polenta Lasagna

"This recipe comes from my cousin Rita, and is a great alternative to ordinary lasagna. It is very easy to make and very tasty! I happen to be a do-it-ahead type, so you can make the meat/marinara mixture ahead and put it in the fridge until your ready...so simple and quick to throw together!"

  • Slice the polenta and zucchini into 1/4" slices; set aside.
  • In seperate bowl, add cooked sausauge, add basil, and marinara sauce, mixing well.
  • Arrange half of the polenta over the bottom of large skillet; top with half of the sausage mixture.
  • Layer provolone, zucchini, and mozzarella over sausage mixture.
  • Top with remaining polenta and sausage mixture.
  • Cover and cook over medium high heat approx 8 - 10 minutes or until sauce is bubbly and cheeses are melted.
  • Remove skillet from heat.
  • Sprinkle grated parmesan cheese over lasagna and let stand, uncovered, approx 2 - 3 minutes.
  • Garnish with remaining basil.
