Excellent beans. I used Spicy Red Pepper Tomatoes since I've never seen Rotel tomatoes here and served them over rice. They'd be a lovely addition to a Mexican themed meal or, as a previous reviewer suggested, with chips. I love quick and easy dishes. Thanks for posting.
It's true, these really are ridiculously easy: my kind of recipe. I served these as a side to tacos but next time would serve them over rice for a meatless main dish. I would also try adding corn to the mixture which would still keep the recipe in the ridiculously easy range.
