  1. Melt butter and add eggs, milk and ricotta.
  2. add flours, sugar, baking powder, salt and cinnamon and whisk until batter is smooth.
  3. heat a large nonstick skillet until hot. Spoon 2 tablespoons of batter for each pancake into the skillet leaving room between. Let cook until bubbles begin to appear on the surface, about 2 minutes. Flip and cook an addititional 1-2 minutes.
