My grandmother's recipe seems to be slightly different than the rest I've seen. I like how simple it is to make. My family traditionally serves these small pancakes with powdered sugar and homemade jam, though the traditional "syrup and butter" is also very good. I hope you enjoy! We tend to double or triple the recipe for larger gatherings.

  1. In a medium bow, stir ricotta cheese into beaten eggs until well blended.
  2. Beat in flour, melted butter, and salt.
  3. Drop by the tablespoon onto a hot, greased griddle.
  4. Cook until batter is no longer runny, flipping once.

These were good. Added a bit of baking powder and served with maple syrup. Added a few blueberries to some. My family enjoyed them. Thanks for posting.
