I won't rate this because I didn't have any fresh marjoram and used 1/2 a teaspoon of dried as a substitute, and found the flavour very mild. To serve this as an easy dinner I added some chopped ham and it was enjoyed by the family. I needed a low carb dish and this is one I will make again.
I divided the recipe to serve 2. Made it for DH and I this a.m. Used egg substitute for the eggs and lightly sauted the garlic before adding the egg mixture to the pan. Covered the pan for a few minutes to promote cooking. Also, instead of putting it under the broiler, I inverted the fritta onto a large plate and slipped it back into the pan to cook on the other side. The ricotta cheese makes this light flavored and delicate.
