  • In blender beat ricotta until smooth.
  • Beat in sugar.
  • add eggs 1 at a time.
  • On slow speed:.
  • stir in rum, vanilla and orange rind
  • preparation of pan:.
  • cut wax paper to fix bottom of springform pan.
  • butter bottom and sides of pan.
  • pour batter into pan.
  • bake 350 degrees for 1 hour and 15 minutes.
