Ricotta Bread for Bread Machines (1 Pound Loaf)

A favorite I have been making for years. This isn't a very tall loaf and yes - the amount of flour is correct. NOTE: (These days, most bread machines have much bigger pans, so if you have a larger capacity machine, you may instead wish to only mix the dough in the machine,let it rise, then bake the bread itself in a loaf pan (at 350 F for perhaps 30 minutes is a guess). This can still be baked in a larger capacity machine, it will just have an odd shape.

  1. Place all ingredients into a 1-pound capacity (or bigger) bread machine according to the directions in your manual.
  2. Select the basic bread cycle and light crust.
  3. After about 5 minutes, take a peek inside your machine to see if your dough is forming up a ball- if it is too wet, add up to 3 Tbsp additional flour, a spoonful at a time (or as needed based on the hunidity of the day), if too dry, add a little water.

Needed to use up some ricotta and came across this recipe. It was a dense bread, but we enjoyed it. I did add the extra 3 tbs of flour - because I was leaving and wasn't sure if it was going to be sticky or not. Maybe that wasn't the best decision as far as it being heavy. I have a small bread machine, so I'm always on the lookout for 1lb recipes.

I mixed the recipe in the bread machine and baked it in a 8-1/2 X 4-1/2 pan. I did have to add about 1/3 cup additional flour. I baked the loaf for 35 minutes at 350; it could have used an additional 5 minutes or so. Wonderful flavor, I'll make it again.

YUMMMM! This is a very nice bread and I love to make cinnamon french toast with it, bread pudding and/or toast it. I set my crust to medium as I always do and it was lovely! Thank you for a keeper! Am going back to live in the US and searching out bread maker recipes as I have a barely used one awaiting me that I left behind. Great recipe!
