  • 1 cucumber, sliced and seeded
  • 12 onion, yellow sweet, sliced thin
  • 1 jalapeno pepper, chopped
  • 2 tablespoons cilantro, fresh chopped
  • 6 tablespoons rice wine vinegar
  • 2 tablespoons water
  • 1 tablespoon sugar
  • 12 teaspoon kosher salt

directions

  • Mix water, vinegar, sugar, and salt.
  • In a serving bowl arrange the cucumber, pepper, cilantro, and onion in layers.
  • Pour the vinegar mixture over the salad.
  • Refrigerate for 30 minutes before serving.

  1. Excellent recipe! My Thai friend even loved it, although my son ate most of it. I have a boat load of garden cucumbers right now and this salad goes fast! The only minor change I made was that I used Thai peppers because I had them on hand.
     
  2. Great cucumber dish. I made this to go along with our pad thai the other night and it complimented it perfectly. The cool crunchy cukes went great with the warm noodles. I love it! Thank you so much for introducing us to a new cuke recipe, we loved it, especially the combo of the jalapeno with the cilantro (never would of thought to add to cucumbers)
     
  3. This was soooo good! I used the little japanese cucumbers that don't have seeds. So crunchy and tasty!
     
  4. This was edible, but lacked any real flavor. Sorry, but I wouldn't make it again.
     
  5. This was really good! I like that it didn't have any oil. I didn't have any jalapeno, so I substituted red pepper flakes, which made it even easier to prepare. Will definitely make again and again!

<p>I started cooking when I was about 12 years old. I was a fan of Graham Kerr's Galloping Gourmet and my mother helped me buy the ingredients and cook Steak Diane after I saw it on his show. <br /> <br />I can't cook for the family every night, but I try try to have one or two nights a week when I can fix them a home meal. Sunday is the day when my wife, 3 kids, 1 daughter-in-law, and 2 grand daughters get together to have a big dinner. <br /> <br />My picture is me holding my babies. Being a grandfather is really great. They call me Papa by the way.</p>
