I've been cooking this about 25 years. Add Mediteranian oregano if you want greek chicken.
- 4 1⁄4 lbs chicken
- 5 potatoes
- 4 lemons, juice of
- salt, to-taste
- fresh ground black pepper, to-taste
- 1⁄4 cup butter
- Preheat oven to 375°F.
- Place chicken and potatoes in baking pan.
- Top with lemon juice and butter, salt and pepper.
- Bake uncovered for 1 to 1 1/2 hour or until potatoes are fork tender and chicken runs clear.
My husband loves lemon chicken in every variation, so I decided to try this one with potatoes which I've never done so far. Usually there is garlic in the lemon chicken, too, but with the addition of oregano this turned out astonishingly tasty. I will certainly make this again. Thanks for posting!
