I followed the directions exactly, and came up with dry meat and bland breading. If I were to try this again I would not boil nearly as long, and add many spices, which I would rub onto the boiled rabbit before dipping into egg. I think using my favorite fried chicken recipe is the easier way to go. But it is GREAT to see rabbit recipes when many cook books do not have them.
So tasty and quick! This is the first time I've tried fried rabbit because in Australia casseroles and baking are more common methods but I loved this. The rabbit I had was only a medium size one that had been frozen so I only used around 2/3 of the quantity (2 eggs etc) and just put into a pot of cold water so it defrosted as the water was warming up. It went well with a few steamed vegetables over a base of mashed potatoes.
