  • Mince celery, carrot, onion and garlic.
  • Heat up olive oil to medium high heat in a large cooking pot or dutch oven.
  • Sautee vegetables for 5-7 minutes stirring constantly careful not to burn.
  • Add stock,water, ham hock, bay leaves and lentils bring to a boil and then simmer for at leat 1 hour.
  • Add can of tomatoes, diced ham, spices, vinegar, salt and pepper to taste and cook for another 20 minutes.
  • Remove ham hock and discard.
  • Serve soup and enjoy!
