  • 354.88 ml cooked Minute Rice
  • 341 ml can corn or 354.88 ml corn, from cob
  • 236.59 ml almonds, toasted and chopped
  • 236.59 ml fresh peas (or frozen, thawed)
  • 1 peach, peeled and coarsely chopped
  • 118.29 ml Catalina dressing
  • 59.14 ml chopped red onion
  • 59.14 ml chopped cilantro or 59.14 ml chopped fresh parsley

  • Mix all ingredients in large bowl.
  • Refrigerate until ready to serve.
