      This recipe made it into book#234156! OUTSTANDING! What an excellent rice dish. I made it as a side, but could quite contentedly eat this as my main course. It is almost silky in texture..perfection. Plus, the combination of avocadoes, tomato and black olives is to die for. Fantastic recipe. Thank you!!

      Very good rice dish. The avocado makes it almost creamy in texture as it melts into the rice. I followed the recipe closely (other than doubling the garlic and tomatoes). I was also forced to use dried parsley rather than fresh. Very taste side dish to Oaxacan Grilled Shrimp and #16719. Will make this one again.

      Wonderful, pretty and easy to make rice! I followed the recipe exactly but only used 1T of oil. I really loved the avocado in it. If I make this again I will sub cilantro in place of the parsley.

      What a lovely dish! I used already cooked brown rice and followed other reviewers and added more tomatoes, less oil and used kalamata olives.

      This was very good - I took it to a friend's for dinner and everyone ate it, even the kids. I had the leftovers today and added a little sriracha sauce (I love everything spicy) and liked it even more than the first time.

      I always have these ingredients handy for mexican food. This is a great different spin on it. Hearty and flavorfull. I doubled the recipe and used all the same cooking times; worked great. Thanks for sharing!

      This is the first time I have ever used vegetable stock and basmati rice, so this was all pretty much new to me. I believe that if I were to use our favorite rice, Jasmine, instead of the one called for we would have liked it better. It definitely has a nuttier flavor than we are used to. I really liked the black olives, tomatoes and avocado in it. I will probably make it again to fine tune it to our liking. Thanks for posting! It was a great recipe to use for my first adventure into organic and healthier foods. Made for I Recommend Tag.

      Very, very, VERY good and very, very simple. Deceptively filling as a main dish. I almost didn't use an avocado since it was the only ingredient I didn't have on hand but am glad I did. The avocado added a creaminess. I used kalamata olives instead of black which I will do again. Will definitely be making again.

      Yum! We all enjoyed this recipe, I made it as written but I had to leave out the avocados because I didn't have any at home. The flavours all really went well together, served it with Moroccan Vegetarian Sweet Potato Stew - Thank you Chef Kate

      This was great and it was even better the next day. Everyone ate it including the baby who couldnt get enough of the tomatoes and olives. Thanks for posting such a filling easy veggie dish.

      I love riace dished and this was really nice, I loved all the ingredients, the colors were outstanding, I dont know if I like the Avocado or the black olives better. I followed the directions comepletely, except I added some wild rice, because I could. Will make again! Thank you. ZWT3

      We really enjoyed this rice dish. I made half a recipe as per directions, scooping the avocado out of the peel and reserving the peel to serve the rice in.

      Nice flavors in this rice recipe, we enjoyed this very much. I did not add the avocado to the tomato mixture but did dice it and serve it along side the rice. Next time I think I will add a little more tomato.
