Rice With Jalapenos

My friend Jennifer gave me this recipe and my family LOVES it. It is a nice change from plain white rice, though I must warn you it is not for the faint of heart. :o)

  1. Grease a 9x9" pan.
  2. Combine the rice, sour cream, salt and pepper.
  3. Spread 1/2 of this mixture in the bottom of the pan.
  4. Top with cheese (less reserve) and jalapenos.
  5. Add remaining rice mixture on top and sprinkle with reserved cheese.
  6. Bake at 350 degrees for 20 minutes.

Yes, I tweaked a little.. I used canned green chiles and low fat sour cream and cheese, but it was delicious. Definitely a keeper.

I made this for my lunch, WOW! I love it! although I used leftover white rice and not instant. This is very good, I served it to myself with some grilled chicken skewers and it was great!
