Rice with Almonds and Raisins

ingredients
- 1 bag brown rice (I use Success Brand)
- 59.14 ml sliced almonds
- 29.58 ml dark raisins
- 44.37 ml butter
- 14.79 ml parsley
directions
- Boil rice according to package directions (10 minutes on stove).
- Saute' the almonds in butter until soft.
- Add raisins and cook until a little soft.
- Mix the cooked rice and the almond/raisin mixture together.

Having recently discovered that raisins are not just for dessert makes for some great new dishes at our house ... and this one was great! I didn't manage to find the Success rice and went with using brown rice prepared using Susan Lees Perfect Brown Rice 56242, and it was perfect for this dish! We love brown rice and we especially enjoyed it made up using this recipe. It was sooo good and so complimented your Moroccan Lemon Chicken. Definitely a keeper! Thank you Merlot for sharing this delicious recipe.

A wonderful side dish that is easy and fast to make. Thank you, Merlot, for introducing me to Success brown rice! This recipe has a nutty, caramel flavor I really enjoyed--so did DH! This rice would go nicely with so many main courses. We had it with Merlot's delicious Moroccan Lemon Chicken (#34697).

It's hard to believe I've been a member for over 7 years now! Once I discovered Zaar, I never looked back at the other sites. This place is truly like family, sitting around sharing great recipes, helpful hints and just chit-chatting about our daily lives.
Hubby and I were fortunate enough to be able to retire early and now enjoy traveling in our motorhome :) . Our travels have taken us all over this great country of ours and meeting new and exciting people along the way is an extra bonus. We are blessed. We usually alternate between Florida Keys and Arizona for the winters. The rest of the year, you can find us just about any place. We love our home on the lake, but there is a bit of gypsy in us both and we hit the road as much as we possibly can.
I subscribe to Taste of Home and own EVERY Southern Living Annual since 1979.
I guess my biggest pet peeve is people who are negative all the time. Because I enjoy life so much, I try to avoid such people. Life is too short.
