Salad

- 453.59 g can chickpeas, rinsed well and drained (garbanzos)
- 177.44 ml feta cheese, crumbled
- 157.80 ml roasted red pepper
- 59.14 ml fresh parsley, chopped
- 59.14 ml fresh dill
- 3 scallions, very thinly sliced

- 59.14 ml fresh lemon juice (or more, to taste)
- 2 garlic cloves, minced
- salt
- 59.14 ml olive oil
directions
- Combine the rice, chickpeas, feta cheese, peppers, parsley, dill,.
- and scallions in a large bowl and toss well.
- Whisk all the dressing ingredients.
- Pour the dressing on the rice mixture and mix.
