This is a great rice dish. I added a large clove of garlic, and had to leave out the mushrooms because I didn't have any. Delicious!
This was super good! I also sauteed the veggies on the stove and added the rice. Then I put it in a casserole dish, covered tightly with foil, and baked according to the directions.
We had plenty left and snacked on it for a couple of days. I might add some peas and slivered almonds next time .......just to enhance it a little more. But this is delicious on it's own. Thanks for a great new recipe for my meals.
Really enjoyed this recipe. As a previous reader said I too sauteed my vegies in butter on the stove instead of microwaving (personal preference). I added some garlic and we devoured the rice. Served with recipe#3157471#315771 and a green salad.
Simple and tasty with great results every time. I have made this several times now and it is enjoyed each and every time with an array of different entrees!
We love rice any which way but burnt and this was a great side dish to our pork chops. We will use this recipe many times down the road!
I saved this ages ago to try, I make my rice like this all the time it is a great side dish and a great way to use up any veg. I have never made it with the veg you listed and as I had a carrot and celery stick to use up, I thought I would make it your way. I really liked this, I usually make it with red pepper, mushroom and onion. I loved the crunch that comes through from the carrot and celery, which I cooked in a little butter on the stove rather than the microwave, just personal preference. It to me is the perfect dish as it is a wonderful side dish that looks great because of the colour and tastes wonderful because of the chicken broth. It is also the perfect lazy main dish if you have a bunch of veg to use up just add some chicken or other meat and perfect you have a really tasty easy meal to make.. Great post Mrs J
